400g green prawn meat – peeled, de-veined and tails removed
2 cloves garlic - crushed
1 French shallot or half a small brown onion – finely chopped
½ long red chilli, seeds removed
1 lemon - plus extra if needed
1 tsp caster sugar
2 tbs cream cheese
60gm baby spinach leaves
1/2 bunch green basil
Salt & white pepper to taste

Crispbread to serve

  1. Heat 1 tbs of oil in a fry pan. Cook the onion, garlic and finely chopped chilli on a med-high heat for a couple of minutes until softened and translucent. Add ½ the prawns and cook for a further 2 minutes until just cooked. Add the juice of ½ the lemon and sprinkle over the sugar.
  2. Transfer to a food processor (keep all pan juices and add them as well) and pulse. Keep slightly chunky. Transfer to a large bowl and add the cream cheese, remaining lemon juice, salt & pepper to taste and stir to combine.
  3. Toss the remaining prawns in 1 tsp oil and season well. Heat a clean fry pan over a high heat and sear the prawns for 1 minute each side until caramelized but still a little translucent. Remove from the heat and chop into small chunks. Finely shred the baby spinach and basil leaves and add this to the Prawn and Cheese mix with the extra cooked prawns. Stir to combine and check for seasonings. Add more lemon to taste if necessary. Cool the Pâté in your fridge until ready to serve.
