This is exactly as the name suggests… It’s my mothership recipe.
From here on in you can make this mumma into whatever you like… Add whatever fruit you like… Add whatever flavourings you like…
Want chocolate chip granola? Add cacao nibs.
Want dried blueberries? Add them.
You get the drift. Anyhoo, enjoy!!
Also, FYI: You can actually buy gluten free oats now, whodathunkit!
4 Cups of good quality Rolled Oats
1 Cup Shredded coconut
1/2 Cup Slivered Almonds
1/2 Cup Pepitas
1/2 Cup Sunflower Seeds
1/4 Cup White Chia seeds
100ml melted Coconut oil
150ml runny Honey, Rice Malt Syrup (or any other sweetener you like, just NO SUGAR!)
1 cup of mixed dried berries, fruit or whatever delicious thing you like… I like to use a mix of Inca, Goji, Currants and Cranberries.
- Preheat your oven to 160c
- Mix all the dried ingredients together in a large bowl except the final cup of dried fruit. In a small jug, mix together the coconut oil and your preferred sweetener, and then add to the dry ingredients and mix well.
- Spread the granola over 2 lined baking trays, and bake in the oven (check regularly, and stir regularly) for 30 minutes until lightly browned all over. Remove from the oven and leave to cool on the trays without disturbing it. The Granola will crisp up as it cools.
- Once cool, add the fruit and stir gently to combine. Store the Granola in an airtight container, and eat WHENEVER the fancy takes you. Pure bliiiiiissssss.
