1 1/2 cups Rolled Oats
1 cup Puffed Rice
1/2 cup plain Wholemeal flour
1/2 cup moist Coconut flakes
1 cup dried finely chopped mixed Fruit ***
1/2 cup Cacao nibs
1/2 cup Coconut sugar
2/3 cup Rice Malt Syrup
1/2 cup Coconut oil
2 tsp Vanilla extract
- Pre-heat your fan forced oven to 160c, then line a 20 x 10 rectangle tray with baking paper.
- In a large bowl, mix together all the dry ingredients. In a small jug, mix together the Rice Malt Syrup, Coconut oil and Vanilla. Place in the microwave for a few seconds if the oil needs to be melted, then add to the dry ingredients and mix very well.
- Push the mixture into your pre-lined tray, making sure it is evenly spread, then bake for 30 minutes until lightly browned. Leave to cool completely in the tin, then remove and cut into 12 equal sized bars. To store - wrap the bars individually and keep for up to 1 month in an airtight container in the pantry. YUM!!!
- ** Tip: You can use any dry fruit you like... Apricots, Apples, Peaches, Banana etc... ** If you don't have Rice Malt Syrup, you could use Honey instead.
