Buttermilk Panna Cotta

600ml Buttermilk
600ml Thickened Cream
1 Vanilla pod – split and seeds scraped
1/3 cup Caster sugar
1/3 cup Honey
6 regular Gelatine leaves soaked in cold water for 5 minutes

  1. In a medium saucepan, slowly heat the cream, sugar, honey and scraped vanilla seeds, throw in the pod as well. Squeeze the water out of the soaked gelatine leaves and add them to the heated cream mix, stir well until fully combined. Take the cream off the heat, add the buttermilk and stir well.
  2. Once it’s all well combined, pour the mix through a fine sieve into a large jug. Transfer the sieved mix into 8 – ¾ cup moulds and place in the fridge for 3 hours or until set.
  3. Eat the Panna Cotta plain or top with fresh Berries, Passionfruit pulp or Dark Chocolate shavings to serve.
