      THIS was an epic freestyle tonight. Winnie could n THIS was an epic freestyle tonight. Winnie could not stop going on about how much she loved it. For one of the harshest critics of them all; a 9 year old, to rave about it you know it's a winner. It was also so easy and one pot Woot Woot 🙏 The star of this dish was the pearl couscous (also called moghrabieh). It's pretty easy to track down if you've never heard of it. If you're in ADL you'll find big bags of it at Gaganis but any decent super or gourmet grocer will sell it (usually in the pasta or international aisle). Make the effort to get some, buy extra and whack it in your pantry because it lasts forever and it is absolutely delicious in loads of recipes. Anyhoo, my recipe for this deliciousness is below for your eating pleasure. Save. Share. Enjoy. 😎 ONE POT CHICKEN + MOGHRABIEH CASSEROLE Serves 4 Ingredients; 1kg boneless, skin-on chicken thighs 3 rashers bacon, thinly sliced 1 large red onion, roughly chopped 1 tbs fresh rosemary leaves 6 unpeeled baby potatoes, chopped into quarters 1.5 cups dried pearl couscous (MOGHRABIEH) 1 ltr chicken stock 1/2 cup crushed tinned tomatoes 1/2 cup whole cherry tomatoes Olive oil, salt, pepper 1/4 cup pitted Kalamata olives Fresh flat leaf parsley Method: Preheat your fan forced oven to 210c. In a heavy based low casserole or saute pan, fry the onion, bacon and rosemary in oil over a high heat until starting to brown. Add the potatoes and fry for a further minute, then add the pearl couscous and fry, stirring for another minute. Season well. Add the stock, crushed tomatoes and cherry tomatoes to the pan and stir well to combine. Rub the skins of the chicken with some oil and gently place the thighs skin side up in the casserole making sure not to cover them with the sauce (this will ensure they brown and crisp up well). Season again with more pepper if you want. Bring it to a simmer, then place the dish uncovered in the top half of your oven. Leave it for 1 hour. (Go watch telly or sort out the kids etc) After exactly 1 hour take the dish out the oven. Scatter over the olives and parsley. Leave it to rest uncovered for about 5 minutes before serving.
