4 firm Pears
½ cup of Caster Sugar
2 cups of Water
1 Vanilla pod – split and seeds scraped
3 whole Star Anise
1 Cinnamon Quill
½ tsp Salt

- Make the Panna Cotta according to my linked recipe, but instead of setting in individual moulds, Line a loaf 20cm x 10cm loaf tin with clingwrap or oil a jelly mould or silicone bundt tin. Place into the fridge for 6 hours or overnight to set.
- Meanwhile to Make the Pears – Pre-heat your fan-forced oven to 170°c. Cut each pear in half through the middle, leaving the stems and cores intact. Place the pears, cut side down into a small baking dish making sure they are snug.
- In a small saucepan combine the sugar, water, vanilla seeds and pod, and the spices. Bring to the boil, stirring occasionally, then pour the boiling syrup over the pears. Wrap the dish tightly with alfoil, then bake for 1 hour. After 1 hour, remove the foil and turn the pears over, then bake uncovered for 30 minutes further. Remove from the oven, and leave to cool slightly, before placing in the fridge to cool completely.
- To serve – Turn the set Panna Cotta out on to your serving plate, remove the clingwrap and serve with the cold pears and a drizzle of syrup on the side.
- *** Tip: These pears are totally delicious with yoghurt and granola for a naughty brunch. *** Tip: I love to set my Panna Cotta's in large moulds when I am entertaining, it's so much fun and easier to feed a crowd! This is a fabulous dessert for entertaining, as it can all be made the day before and unmoulded at serving time. ENJOY!
