1 whole small head of Cauliflower
1 large bunch of Flat Leaf Parsley
1 small bunch of Coriander
1 small bunch of fresh Mint
4 whole green Spring Onions – Finely sliced on the angle.
200gms of small Grape or Cherry Tomatoes, halved (make sure they are ripe and juicy)
1 Lemon
Salt and White pepper
- In a food processor, pulse the cauliflower in batches until it is very finely chopped. You want it the consistency of Cous Cous. Once it is all chopped, set it aside in a large bowl.
- Add the parsley, coriander and the mint leaves to the processor, and pulse until it is roughly chopped. You want the herbs to give body to the salad. Add the herbs to the bowl.
- Add the spring onions to the bowl with the juice of the lemon. Season well with salt and pepper to taste and mix well to combine. Place the Tabouli into your serving bowl and scatter over the tomatoes. It's ready to serve YIPEEEEEE!!!
- Tip: Reserve some herb leaves and spring onions to scatter over the top before serving. Tip: Use whatever leafy herbs you have, Dill would also be a nice addition to this salad instead of coriander or mint. Tip: This salad is still delicious the next day.
