300gm Strong (bakers) Flour
½ tsp Salt
50gms Lard
½ cup Warm Water
- Place the flour and salt into a bowl and using your fingertips, rub in the cold lard until it resembles coarse sand. Add the water until a soft dough has formed, it shouldn’t be too sticky, then turn the dough out onto a cold surface and knead for approx. 5 minutes until it is smooth and elastic. Wrap in cling film and leave to rest for 30 minutes.
- After resting, cut the dough into 8 equal sized pieces. Roll the tortilla out into an even circle as thinly as possible. Heat a heavy fry pan or skillet over a medium heat and cook the tortilla, 2 minutes the first side, until puffed and golden, then 1 minute the other side. Repeat with the remaining tortillas. Wrap in foil to keep warm until serving.
